Now now!! If you know me, you will know that the thing that I love the most is Peanut Butter and Matcha!
I was doing my Ethics assignment last week and then suddenly had the urge to eat something peanut buttery, Maybe it's because my "guest" is coming soon or just because my sweet tooth kicked in I don't know but due to this I was searching online for a perfect peanut butter brownie recipe... I found one that everyone says it's the best PB brownie recipe, I tried and it's a bit too dry for me, I don't know maybe I need to adjust the baking time, and also it's not as chewy as I would like.
So I tried other recipes, but the result is not as satisfying, so I ended up using my usual brownies recipe but modify it. Also please note, I don't like using baking powder in my brownies because I think it dries my brownie. So my recipe has no baking powder at all.
Also please please do not and I stress it again DO NOT use mixer to beat the batter unless you want your brownie to be cakey and not chewy/dense. Also I use Baker's Secret lamington pan and it's 30x19cms, it fits my brownie perfectly. So when baking please keep these in mind!
I swear, I baked this last week twice and both times received the same receptions from both my sharemates and friends. They love them and well in a little over an hour, finish the whole batch! So because it receives five brownie points from everyone, I am happy to share the recipe with you :)

Here goes the recipe:
Chewy Peanut Butter brownie Recipe

375g cooking white chocolate (That's right a package of white chocolate melts)
1 cup peanut butter
1 cup unsalted butter - softened
1 cup granulated sugar
2/3 cup packed light brown sugar
5 eggs (at room temperature)
2 tspns vanilla extract
1 1/4 cup plain flour
1 tspn salt
Methods:
- Preheat the oven to 180 degree C. Butter the lamington pan (or you can spray the pan with cooking oil)
- Put white chocolate in a cooking bowl and microwave for one min.
- In a different bowl add all the eggs and beat it with forks lightly, then set aside
- In the white chocolate bowl, add butter and peanut butter mix with whisk until all well blended.
- Then slowly add in both sugars (caster and brown sugar) - mix well
- Add sugars slowly bit by bit, next add the eggs (not all of them bit by bit) - then mix the batter with spatula until all blend in, then add in the flour+salt. Mix well but NOTE: do not over beat because your brownie will turn cakey.
- Pour the batter into the prepared pan and bake for 25 mins (remember this depend on your oven, so please keep an eye, every 10 mins to ensure you won't burn the brownie)
- Once it's baked, take it out and leave it cool before serving or serve it hot with vanilla ice cream on top (YUMM)
- These brownies will store well in the freezer for a week. But I doubt you will have any left to store anyway...
